Moroccan Thai Fusion Cooking Class EU100pp 08.50am - 2.30pm a 6 dish Moroccan/Thai fusion, lunch class for two to six guests
This wonderful class, "Moroccan Thai Fusion", is the most recent to join our repertoire. Slowing down Thai and revving up Moroccan, a glorious marriage of two tantalising cuisines, with best friends, Coriander, the bridesmaid and garlic, the groomsman with a combination of cross cultural spices, as the guests! 08.50am - the class begins with a discussion over our wonderful spiced coffee as to the day's menu.. then it's the shopping list in English followed by Arabic, to go shopping in your new language .. all our classes really do begin at the beginning.. you are engaged with the food, the discussion, the choosing, the prepping, from the moment you arrive! The dishes are to be anchored around the star of the show, Thai/Moroccan spiced chicken tajine, where you will make the mixture, to be stuffed between skin and flesh before placing the chicken into the tajine after resting for an hour or so.. Charred aubergine mash over spiced, chilled orange slices Sardines, cooked over tomato jam, with caramelised onions and wrapped in lettuce Amalou - a take on the old Thai favourite of peanut dressing but with Moroccan almonds and argan oil Grain salad - a wonderful salad of grains, seeds and nuts with a Moroccan twist of onions and black raisins and orange Slow seared squid, combining time honoured Thai sauces and Moroccan spices.
